Ingredients:

  • 4 quarts (3.8 liters) water
  • 2 pounds (900g) raw, in-shell peanuts (green or mature)
  • 1 cup (235g) kosher salt
  • Optional: 1 tablespoon (7g) Cajun seasoning
  • Optional: red pepper flakes to taste
  • Optional: garlic powder to taste

Instructions:

  1. Rinse the raw peanuts thoroughly under cold water to remove any dirt or debris.
  2. Combine the water, salt, and optional seasonings in a stockpot. Stir until the salt is completely dissolved.
  3. Add the rinsed peanuts to the brine. Ensure they are fully submerged. Weigh them down with a plate if needed.
  4. Bring the brine to a rolling boil over high heat.
  5. Reduce the heat to medium-low, cover the pot, and simmer for 2-4 hours, or until the peanuts reach your desired level of tenderness. Check frequently and add water if needed.
  6. Remove a peanut from the pot using a slotted spoon. Allow it to cool slightly, then crack it open and taste. Continue simmering if they are still too firm.
