Ingredients:

  • 4 tablespoons (28g) all-purpose flour (plain flour)
  • 2 tablespoons (25g) granulated sugar
  • ⅛ teaspoon baking powder
  • ⅛ teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons (30ml) milk (dairy or non-dairy)
  • 1 tablespoon (14g) unsalted butter, melted
  • ⅛ teaspoon vanilla extract
  • 1 tablespoon (12.5g) granulated sugar
  • ½ teaspoon ground cinnamon

Instructions:

  1. In the mug, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
  2. Pour in the milk, melted butter, and vanilla extract.
  3. Stir with a fork until the batter is smooth and no lumps remain. Be careful not to overmix.
  4. In a small bowl, combine the sugar and cinnamon for the topping.
  5. Sprinkle the cinnamon-sugar mixture evenly over the top of the cake batter.
  6. Microwave on high for 1-2 minutes, or until the cake is puffed up and cooked through. Microwave times may vary depending on your microwave's wattage. Start with 1 minute and add 15-second increments as needed.
  7. Let the mug cake cool for a minute or two before enjoying.
