Ingredients:

- 2 tablespoons (25g) granulated sugar
- ⅛ teaspoon baking powder
- ⅛ teaspoon ground cinnamon
- Pinch of salt
- 2 tablespoons (30ml) milk (dairy or non-dairy)
- 1 tablespoon (14g) unsalted butter, melted
- ⅛ teaspoon vanilla extract
- 1 tablespoon (12.5g) granulated sugar
- ½ teaspoon ground cinnamon
Instructions:
- In the mug, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
- Pour in the milk, melted butter, and vanilla extract.
- Stir with a fork until the batter is smooth and no lumps remain. Be careful not to overmix.
- In a small bowl, combine the sugar and cinnamon for the topping.
- Sprinkle the cinnamon-sugar mixture evenly over the top of the cake batter.
- Microwave on high for 1-2 minutes, or until the cake is puffed up and cooked through. Microwave times may vary depending on your microwave's wattage. Start with 1 minute and add 15-second increments as needed.
- Let the mug cake cool for a minute or two before enjoying.
