Ingredients:

  • 1.5 cups 2% milk
  • 1 tbsp cornstarch
  • 1 tbsp cold water
  • 6 oz extra-sharp cheddar cheese, freshly grated
  • 2 tbsp Greek yogurt
  • 0.5 tsp dry mustard powder
  • 0.25 tsp garlic powder
  • 0.25 tsp smoked paprika
  • salt to taste
  • fresh cracked pepper to taste

Instructions:

  1. In a small bowl, whisk the cornstarch into the cold water until it forms a smooth, milky liquid slurry.
  2. Pour the milk into a small heavy-bottomed saucepan over medium heat.
  3. Whisk in the dry mustard powder, garlic powder, and smoked paprika into the milk.
  4. As the milk begins to steam (do not boil), slowly whisk in the cornstarch slurry.
  5. Continue whisking constantly until the mixture thickens enough to coat the back of a spoon.
  6. Reduce heat to low and add the freshly grated cheddar cheese and Greek yogurt, whisking until completely melted and glossy.
  7. Season with salt and fresh cracked pepper to taste and serve immediately over steamed broccoli.
