Ingredients:
- 1.5 cups 2% milk
- 1 tbsp cornstarch
- 1 tbsp cold water
- 6 oz extra-sharp cheddar cheese, freshly grated
- 2 tbsp Greek yogurt
- 0.5 tsp dry mustard powder
- 0.25 tsp garlic powder
- 0.25 tsp smoked paprika
- salt to taste
- fresh cracked pepper to taste
Instructions:
- In a small bowl, whisk the cornstarch into the cold water until it forms a smooth, milky liquid slurry.
- Pour the milk into a small heavy-bottomed saucepan over medium heat.
- Whisk in the dry mustard powder, garlic powder, and smoked paprika into the milk.
- As the milk begins to steam (do not boil), slowly whisk in the cornstarch slurry.
- Continue whisking constantly until the mixture thickens enough to coat the back of a spoon.
- Reduce heat to low and add the freshly grated cheddar cheese and Greek yogurt, whisking until completely melted and glossy.
- Season with salt and fresh cracked pepper to taste and serve immediately over steamed broccoli.
