Ingredients:
- 1 pound (450g) large carrots, peeled and cut into 1/2-inch thick sticks or planks
- 2 tablespoons (30ml) olive oil
- 1/2 teaspoon (3g) smoked paprika
- 1/4 teaspoon (1.5g) garlic powder
- 1/4 teaspoon (1.5g) onion powder
- Salt and freshly ground black pepper to taste
- 2 tablespoons (30ml) honey
- 2 tablespoons (30ml) lime juice (from about 1 lime)
- 1 tablespoon (15ml) olive oil
- 1/4 teaspoon (1.5g) red pepper flakes (optional, for a bit of a kick!)
Instructions:
- Peel and cut the carrots into even-sized sticks or planks. This ensures even cooking.
- In a medium bowl, toss the carrots with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Make sure they're evenly coated.
- Preheat your grill to medium heat (about 350-400°F or 175-200°C). Make sure the grates are clean.
- Place the carrots directly on the grill grates, making sure they are not overlapping.
- Grill for 15-20 minutes, turning occasionally, until tender-crisp and slightly charred. Watch them carefully to prevent burning.
- While the carrots are grilling, whisk together honey, lime juice, olive oil, and red pepper flakes (if using) in a small bowl.
- During the last few minutes of grilling, brush the carrots with the honey-lime glaze.
- Remove the carrots from the grill and serve immediately. Garnish with a sprinkle of fresh herbs, if desired.
