Ingredients:

  • 1 pound (450g) large carrots, peeled and cut into 1/2-inch thick sticks or planks
  • 2 tablespoons (30ml) olive oil
  • 1/2 teaspoon (3g) smoked paprika
  • 1/4 teaspoon (1.5g) garlic powder
  • 1/4 teaspoon (1.5g) onion powder
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons (30ml) honey
  • 2 tablespoons (30ml) lime juice (from about 1 lime)
  • 1 tablespoon (15ml) olive oil
  • 1/4 teaspoon (1.5g) red pepper flakes (optional, for a bit of a kick!)

Instructions:

  1. Peel and cut the carrots into even-sized sticks or planks. This ensures even cooking.
  2. In a medium bowl, toss the carrots with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Make sure they're evenly coated.
  3. Preheat your grill to medium heat (about 350-400°F or 175-200°C). Make sure the grates are clean.
  4. Place the carrots directly on the grill grates, making sure they are not overlapping.
  5. Grill for 15-20 minutes, turning occasionally, until tender-crisp and slightly charred. Watch them carefully to prevent burning.
  6. While the carrots are grilling, whisk together honey, lime juice, olive oil, and red pepper flakes (if using) in a small bowl.
  7. During the last few minutes of grilling, brush the carrots with the honey-lime glaze.
  8. Remove the carrots from the grill and serve immediately. Garnish with a sprinkle of fresh herbs, if desired.
