Ingredients:

  • 1 lb (450 g) mild provolone cheese, cut into blocks or round pieces
  • 2 tbsp (30 mL) olive oil
  • 1 tbsp (15 g) smoked paprika
  • 1 tsp (5 g) garlic powder
  • Salt, to taste
  • Fresh herbs (like rosemary or thyme) - optional garnish
  • Cracked black pepper - optional garnish

Instructions:

  1. Cut provolone into manageable pieces (blocks or rounds) and pat dry to remove excess moisture for better smoke adherence.
  2. In a bowl, combine olive oil, smoked paprika, garlic powder, and salt. Brush the mixture generously over the provolone pieces.
  3. Preheat the smoker to 225°F (107°C). If using stovetop, create a makeshift smoker with a pot and aluminum foil, ensuring smoke can circulate.
  4. Place provolone in the smoker or the homemade setup and smoke for 30 minutes, checking periodically. Adjust heat if necessary.
  5. Once smoked, remove cheese and let it cool slightly. Garnish if desired, then serve with your favorite accompaniments.
