- 1 tbsp (15 g) smoked paprika
- 1 tsp (5 g) garlic powder
- Salt, to taste
- Fresh herbs (like rosemary or thyme) - optional garnish
- Cracked black pepper - optional garnish
Instructions:
- Cut provolone into manageable pieces (blocks or rounds) and pat dry to remove excess moisture for better smoke adherence.
- In a bowl, combine olive oil, smoked paprika, garlic powder, and salt. Brush the mixture generously over the provolone pieces.
- Preheat the smoker to 225°F (107°C). If using stovetop, create a makeshift smoker with a pot and aluminum foil, ensuring smoke can circulate.
- Place provolone in the smoker or the homemade setup and smoke for 30 minutes, checking periodically. Adjust heat if necessary.
- Once smoked, remove cheese and let it cool slightly. Garnish if desired, then serve with your favorite accompaniments.
