Ingredients:

  • 8 oz (225g) dried spaghetti or linguine (or ramen noodles)
  • Water for boiling
  • 1/4 cup (60ml) soy sauce
  • 1/4 cup (60ml) peanut butter (smooth or crunchy)
  • 2 tablespoons (30ml) rice vinegar
  • 2 tablespoons (30ml) sesame oil
  • 2 tablespoons (30ml) honey or maple syrup
  • 1-2 tablespoons (15-30ml) sriracha
  • 1/4 cup (60ml) warm water
  • 1 clove garlic, minced
  • 1/2 inch ginger, grated
  • 2 tablespoons chopped peanuts (optional)
  • 1 green onion, thinly sliced (optional)
  • Sesame seeds (optional)

Instructions:

  1. Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions until al dente. Drain well and set aside.
  2. In a mixing bowl, whisk together the soy sauce, peanut butter, rice vinegar, sesame oil, honey/maple syrup, sriracha, warm water, minced garlic, and grated ginger until smooth. Add more water, 1 tablespoon at a time, until the sauce reaches your desired consistency.
  3. Add the cooked noodles to the mixing bowl with the peanut sauce. Toss well to coat the noodles evenly.
  4. Divide the peanut noodles into bowls. Garnish with chopped peanuts, sliced green onions, and sesame seeds (if using). Serve immediately. This peanut noodles recipe is easy to make!
