Ingredients:
- 8 oz (225g) dried spaghetti or linguine (or ramen noodles)
- Water for boiling
- 1/4 cup (60ml) soy sauce
- 1/4 cup (60ml) peanut butter (smooth or crunchy)
- 2 tablespoons (30ml) rice vinegar
- 2 tablespoons (30ml) sesame oil
- 2 tablespoons (30ml) honey or maple syrup
- 1-2 tablespoons (15-30ml) sriracha
- 1/4 cup (60ml) warm water
- 1 clove garlic, minced
- 1/2 inch ginger, grated
- 2 tablespoons chopped peanuts (optional)
- 1 green onion, thinly sliced (optional)
- Sesame seeds (optional)
Instructions:
- Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions until al dente. Drain well and set aside.
- In a mixing bowl, whisk together the soy sauce, peanut butter, rice vinegar, sesame oil, honey/maple syrup, sriracha, warm water, minced garlic, and grated ginger until smooth. Add more water, 1 tablespoon at a time, until the sauce reaches your desired consistency.
- Add the cooked noodles to the mixing bowl with the peanut sauce. Toss well to coat the noodles evenly.
- Divide the peanut noodles into bowls. Garnish with chopped peanuts, sliced green onions, and sesame seeds (if using). Serve immediately. This peanut noodles recipe is easy to make!
