Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts, cut into strips
- 2 tablespoons olive oil
- 2 tablespoons lime juice, freshly squeezed
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced (optional, for more color)
- 8 flour tortillas (6-8 inch diameter)
- Sour cream (optional)
- Guacamole (optional)
- Salsa (optional)
- Shredded cheese (Cheddar, Monterey Jack, or Pepper Jack) (optional)
- Chopped cilantro (optional)
- Lime wedges (optional)
Instructions:
- In a large bowl, whisk together the olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Add the chicken strips and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- While the chicken marinates, slice the onion and bell peppers into thin strips.
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell peppers and sauté until tender-crisp, about 5-7 minutes. Remove the vegetables from the skillet and set aside.
- Add the marinated chicken to the same skillet (you might need to add a little more oil if the pan is dry). Cook over medium-high heat until cooked through and lightly browned, about 5-7 minutes. Chicken internal temperature should reach 165°F (74°C).
- Return the sautéed vegetables to the skillet with the chicken. Toss to combine and heat through for another minute.
- While the chicken and vegetables are heating through, warm the tortillas. You can do this in a dry skillet, in the microwave (wrapped in a damp paper towel), or over an open gas flame (if you're feeling adventurous!).
- Serve the chicken and vegetable mixture in the warm tortillas, topped with your favorite toppings. Get creative with those toppings!
