Ingredients:

  • 1 lb (450g) sirloin steak, thinly sliced
  • 1 tbsp (15ml) soy sauce, low sodium
  • 1 tbsp (15ml) cornstarch (cornflour)
  • 1 tsp (5ml) sesame oil
  • ½ tsp (2.5ml) ground ginger
  • Pinch of black pepper
  • 2 tbsp (30ml) vegetable oil (or canola oil)
  • 1 large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 inch (2.5cm) ginger, grated
  • 1 red chilli, finely chopped (optional)
  • ¼ cup (60ml) beef broth (or chicken broth)
  • 2 tbsp (30ml) soy sauce, low sodium
  • 1 tbsp (15ml) oyster sauce (or hoisin sauce)
  • 1 tbsp (15ml) brown sugar (or honey)
  • 1 tsp (5ml) rice vinegar
  • 1 tsp (5ml) sesame oil
  • 1 tsp (5ml) cornstarch (cornflour)
  • 4 cups cooked white rice (Jasmine or Basmati)
  • Sesame seeds, for garnish (optional)
  • Chopped green onions (scallions), for garnish (optional)

Instructions:

  1. Marinate the Beef: In a bowl, combine the sliced beef with soy sauce, cornstarch, sesame oil, ginger, and black pepper. Mix well and set aside for at least 10 minutes.
  2. Prepare the Sauce: In a separate small bowl, whisk together the beef broth, soy sauce, oyster sauce (or hoisin), brown sugar (or honey), rice vinegar, sesame oil, and cornstarch. Set aside.
  3. Stir-Fry the Aromatics: Heat the vegetable oil in a wok or large skillet over high heat. Add the onion and stir-fry until softened, about 2-3 minutes. Add the garlic, ginger, and red chilli (if using) and cook for another minute until fragrant.
  4. Add the Peppers: Add the sliced bell peppers to the wok and stir-fry until they are tender-crisp, about 4-5 minutes.
  5. Cook the Beef: Push the vegetables to the side of the wok. Add the marinated beef to the center and stir-fry until browned and cooked through, about 3-4 minutes. Ensure no pink remains.
  6. Combine Everything: Pour the prepared sauce over the beef and vegetables. Bring to a simmer, stirring constantly, until the sauce thickens, about 1-2 minutes.
  7. Assemble the Bowls: Divide the cooked rice among four bowls. Top with the beef and pepper stir-fry.
  8. Garnish and Serve: Garnish with sesame seeds and chopped green onions (if desired). Serve immediately.
