Ingredients:
- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 3 ripe bananas, mashed (about 1 cup / 240g)
- ¾ cup (150g) granulated sugar
- ⅓ cup (75g) unsalted butter, melted and slightly cooled
- 1 large egg, beaten
- 1 teaspoon pure vanilla extract
- Optional: ½ cup (50g) chopped walnuts or chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C) and prepare the muffin tin by lining with paper liners or greasing well.
- Mix the dry ingredients: sift together the flour, baking powder, baking soda, and salt in a medium bowl.
- Combine the wet ingredients: in a large bowl, mash the bananas until smooth and stir in the sugar, melted butter, beaten egg, and vanilla extract.
- Form the batter by gradually adding the dry ingredients to the wet ingredients, stirring gently until just combined and folding in optional walnuts or chocolate chips.
- Fill the muffin cups with the batter, about ¾ full, and bake for 20–25 minutes until a toothpick inserted into the center comes out clean.
- Cool the muffins in the pan for 5 minutes before transferring to a wire rack to cool completely.
