Ingredients:
- 1 ¾ cups (220g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup (113g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup (120ml) whole milk or buttermilk
- 3 medium apples, peeled, cored, and sliced
- 2 tablespoons (25g) granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- Powdered sugar, for dusting
- Whipped cream or vanilla ice cream, to serve
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or line with parchment paper.
- Prepare the apples: peel, core, and slice. Toss with lemon juice, cinnamon, and sugar. Set aside.
- Make the cake batter: In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a separate bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, then vanilla, mixing well after each addition.
- Gradually add dry ingredients to wet mixture, alternating with milk, until just combined.
- Pour half of the batter into the prepared pan. Spread half of the apple slices evenly over the batter.
- Add remaining batter on top, smoothing gently. Arrange additional apple slices on top if desired.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean and top is golden brown.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.
- Serve warm or at room temperature, optionally with whipped cream or ice cream.
