Ingredients:

  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) whole milk or buttermilk
  • 3 medium apples, peeled, cored, and sliced
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • Powdered sugar, for dusting
  • Whipped cream or vanilla ice cream, to serve

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or line with parchment paper.
  2. Prepare the apples: peel, core, and slice. Toss with lemon juice, cinnamon, and sugar. Set aside.
  3. Make the cake batter: In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a separate bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, then vanilla, mixing well after each addition.
  4. Gradually add dry ingredients to wet mixture, alternating with milk, until just combined.
  5. Pour half of the batter into the prepared pan. Spread half of the apple slices evenly over the batter.
  6. Add remaining batter on top, smoothing gently. Arrange additional apple slices on top if desired.
  7. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean and top is golden brown.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.
  9. Serve warm or at room temperature, optionally with whipped cream or ice cream.
