Ingredients:

  • 2 lbs bone-in, skin-on chicken thighs
  • 1 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper

Instructions:

  1. Use paper towels to pat each chicken thigh completely dry, ensuring both the skin and underside are moisture-free.
  2. Drizzle the olive oil evenly over the thighs.
  3. Mix the garlic powder, paprika, oregano, salt, and pepper, then rub the seasoning firmly into the skin and underneath the meat.
  4. Place the thighs skin-side up on a wire rack set over a rimmed baking sheet.
  5. Bake in a preheated 400°F (204°C) oven for 40–45 minutes until the skin is deep mahogany and the internal temperature reaches 175°F (79°C).
  6. Remove from the oven and let the meat rest on a plate for 5–10 minutes to allow juices to redistribute.
