Ingredients:
- 2 lbs bone-in, skin-on chicken thighs
- 1 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
Instructions:
- Use paper towels to pat each chicken thigh completely dry, ensuring both the skin and underside are moisture-free.
- Drizzle the olive oil evenly over the thighs.
- Mix the garlic powder, paprika, oregano, salt, and pepper, then rub the seasoning firmly into the skin and underneath the meat.
- Place the thighs skin-side up on a wire rack set over a rimmed baking sheet.
- Bake in a preheated 400°F (204°C) oven for 40–45 minutes until the skin is deep mahogany and the internal temperature reaches 175°F (79°C).
- Remove from the oven and let the meat rest on a plate for 5–10 minutes to allow juices to redistribute.
