Ingredients:
- 2.5 to 3 lbs pork loin, trimmed
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp garlic powder
- 2 tsp dried thyme
- 4 large carrots, peeled and cut into chunks
- 3 medium potatoes, peeled and diced
- 1 large onion, quartered
- 2 cups vegetable or chicken broth
- 1 bay leaf
Instructions:
- Trim and season the pork loin with salt, pepper, garlic powder, and thyme. Chop the carrots, potatoes, and onion.
- Heat olive oil in a skillet over medium heat. Sear the pork loin on all sides until golden brown (about 2-3 minutes each side).
- Place the chopped vegetables in the bottom of the crock pot. Place the pork loin on top of the vegetables.
- Pour the broth over the meat and top with the bay leaf.
- Cover the crock pot and set on low for 6-8 hours or high for 4-5 hours. The roast should reach an internal temperature of at least 145°F (63°C).
- Remove the pork from the pot, let it rest for 10 minutes, then slice and serve with vegetables.
