Ingredients:

  • 2.5 to 3 lbs pork loin, trimmed
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp garlic powder
  • 2 tsp dried thyme
  • 4 large carrots, peeled and cut into chunks
  • 3 medium potatoes, peeled and diced
  • 1 large onion, quartered
  • 2 cups vegetable or chicken broth
  • 1 bay leaf

Instructions:

  1. Trim and season the pork loin with salt, pepper, garlic powder, and thyme. Chop the carrots, potatoes, and onion.
  2. Heat olive oil in a skillet over medium heat. Sear the pork loin on all sides until golden brown (about 2-3 minutes each side).
  3. Place the chopped vegetables in the bottom of the crock pot. Place the pork loin on top of the vegetables.
  4. Pour the broth over the meat and top with the bay leaf.
  5. Cover the crock pot and set on low for 6-8 hours or high for 4-5 hours. The roast should reach an internal temperature of at least 145°F (63°C).
  6. Remove the pork from the pot, let it rest for 10 minutes, then slice and serve with vegetables.
