- 1/2 cup (120 ml) coconut milk
- 1/2 cup (125 g) creamy peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1-2 teaspoons chili paste (adjust to taste)
- Chopped peanuts and cilantro for garnish (optional)
- Skewers (soaked in water if wooden)
- Lime wedges (for garnish)
Instructions:
- In a bowl, combine soy sauce, lime juice, minced garlic, brown sugar, ground coriander, cumin, and red pepper flakes.
- Add chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
- In a saucepan, whisk together coconut milk, peanut butter, soy sauce, lime juice, brown sugar, and chili paste over medium heat until smooth.
- Thread marinated chicken onto skewers, leaving space between pieces for even cooking.
- Preheat your grill or grill pan over medium-high heat. Grill skewers for about 3-4 minutes per side, or until fully cooked.
- Serve skewers with warm peanut sauce on the side, garnished with chopped peanuts and cilantro, and lime wedges.
