Ingredients:

  • 2 tablespoons lime juice (freshly squeezed)
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 1/2 cup (120 ml) coconut milk
  • 1/2 cup (125 g) creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1-2 teaspoons chili paste (adjust to taste)
  • Chopped peanuts and cilantro for garnish (optional)
  • Skewers (soaked in water if wooden)
  • Lime wedges (for garnish)

Instructions:

  1. In a bowl, combine soy sauce, lime juice, minced garlic, brown sugar, ground coriander, cumin, and red pepper flakes.
  2. Add chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  3. In a saucepan, whisk together coconut milk, peanut butter, soy sauce, lime juice, brown sugar, and chili paste over medium heat until smooth.
  4. Thread marinated chicken onto skewers, leaving space between pieces for even cooking.
  5. Preheat your grill or grill pan over medium-high heat. Grill skewers for about 3-4 minutes per side, or until fully cooked.
  6. Serve skewers with warm peanut sauce on the side, garnished with chopped peanuts and cilantro, and lime wedges.
