Ingredients:

  • 1 tablespoon (15 ml) olive oil
  • 1 pound (450 g) savory sausage, casings removed
  • 4 cups (120 g) fresh kale, stemmed and roughly chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon (2 g) red pepper flakes, adjust to taste
  • Salt and pepper to taste
  • 1 tablespoon (15 ml) lemon juice, optional
  • Grated Parmesan cheese for serving, optional

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sausage. Cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes.
  3. Stir in the minced garlic and red pepper flakes. Cook for 1 minute until fragrant but not browned.
  4. Gradually add the chopped kale to the skillet. Sauté until wilted and tender, about 5 minutes.
  5. Season with salt and pepper. Drizzle with lemon juice if using.
  6. Plate the dish and sprinkle with Parmesan cheese if desired.
