Ingredients:
- 1 tablespoon (15 ml) olive oil
- 1 pound (450 g) savory sausage, casings removed
- 4 cups (120 g) fresh kale, stemmed and roughly chopped
- 3 cloves garlic, minced
- 1/2 teaspoon (2 g) red pepper flakes, adjust to taste
- Salt and pepper to taste
- 1 tablespoon (15 ml) lemon juice, optional
- Grated Parmesan cheese for serving, optional
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add the sausage. Cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes.
- Stir in the minced garlic and red pepper flakes. Cook for 1 minute until fragrant but not browned.
- Gradually add the chopped kale to the skillet. Sauté until wilted and tender, about 5 minutes.
- Season with salt and pepper. Drizzle with lemon juice if using.
- Plate the dish and sprinkle with Parmesan cheese if desired.
