Ingredients:
- 4 oz smoked turkey breast or leg, finely diced
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 4 cloves garlic, thinly sliced
- 1.5 lbs fresh green beans, trimmed and snapped
- 1/4 cup water or low-sodium chicken broth
- 1/2 tsp cracked black pepper
- 1/4 tsp red pepper flakes
- 1/2 tsp sea salt
Instructions:
- Heat a 12 inch cast iron skillet over medium high heat. Add the olive oil and diced smoked turkey.
- Sauté for 3-5 minutes until the turkey edges are mahogany colored and the fat has rendered. Don't stir too often; let them sear.
- Stir in the butter. Once it starts foaming, add the sliced garlic and red pepper flakes.
- Stir constantly for 60 seconds until the garlic is fragrant and pale gold.
- Toss in the green beans and black pepper. Stir quickly to coat the beans in the turkey fat.
- Pour in the water or chicken broth.
- Immediately cover the skillet with the lid and reduce heat to medium. Let them steam for 3 minutes.
- Remove the lid and increase the heat to high.
- Sauté for another 2-3 minutes, stirring frequently, until the liquid evaporates and the beans look blistered.
- Taste for salt and add the sea salt only if needed, as the turkey is already salty.
