Ingredients:

  • 3 large zucchini (approx. 1.5 lbs / 680g), halved lengthwise
  • 1 tbsp (15ml) olive oil
  • ½ tsp (3g) kosher salt
  • 1 lb (450g) ground Italian sausage
  • 4 oz (115g) cream cheese, softened
  • ¼ cup (30g) grated Parmesan cheese
  • 2 cloves (6g) garlic, minced
  • 2 cups (60g) fresh spinach, chopped
  • 1 cup (115g) shredded mozzarella cheese
  • ½ tsp (1g) crushed red pepper flakes
  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Slice zucchini in half lengthwise and scoop out the center flesh with a small spoon, leaving a ¼-inch wall.
  2. Sprinkle the inside of the zucchini boats with salt and let them sit for 10 minutes to draw out moisture; pat dry with a paper towel.
  3. Brush the exterior of the boats with olive oil and roast in the oven for 10 minutes to pre-soften.
  4. In a large skillet over medium-high heat, brown the Italian sausage until fully cooked and seared.
  5. Stir in the minced garlic and chopped spinach, cooking just until the spinach wilts, then remove from heat.
  6. Transfer the mixture to a bowl and fold in the softened cream cheese and Parmesan until smooth and integrated.
  7. Spoon the sausage mixture generously into each pre-roasted zucchini boat, pressing down firmly.
  8. Top each boat with red pepper flakes and shredded mozzarella cheese.
  9. Bake for 15–20 minutes, or until the cheese is bubbling and golden-brown.
