Ingredients:
- 1 lb (454g) sharp cheddar cheese, shredded
- 1 medium yellow onion, peeled
- ½ teaspoon cayenne pepper
- 1 cup (100g) pecan halves
- 1 cup (240ml) mayonnaise
- 1 cup (240ml) Strawberry preserves
- Crackers or pretzels, for serving
Instructions:
- Grate the cheddar cheese into a large bowl.
- Grate the onion and squeeze out any excess water using a paper towel. Add to the cheese.
- Add the mayonnaise and cayenne pepper to the cheese and onion mixture.
- Toast the pecans in a dry pan over low heat until fragrant (about 5 minutes). Roughly chop and add to the cheese mixture.
- Stir all ingredients until thoroughly combined.
- Use a spatula to scoop the cheese mixture onto a serving plate or cake stand, forming a ring shape.
- Refrigerate for at least 2 hours to allow the cheese ring to firm up.
- Remove from the refrigerator 30 minutes before serving. Fill the center of the ring with your favorite preserves. Serve with crackers or pretzels.
