Ingredients:

  • 1 lb (454g) sharp cheddar cheese, shredded
  • 1 medium yellow onion, peeled
  • ½ teaspoon cayenne pepper
  • 1 cup (100g) pecan halves
  • 1 cup (240ml) mayonnaise
  • 1 cup (240ml) Strawberry preserves
  • Crackers or pretzels, for serving

Instructions:

  1. Grate the cheddar cheese into a large bowl.
  2. Grate the onion and squeeze out any excess water using a paper towel. Add to the cheese.
  3. Add the mayonnaise and cayenne pepper to the cheese and onion mixture.
  4. Toast the pecans in a dry pan over low heat until fragrant (about 5 minutes). Roughly chop and add to the cheese mixture.
  5. Stir all ingredients until thoroughly combined.
  6. Use a spatula to scoop the cheese mixture onto a serving plate or cake stand, forming a ring shape.
  7. Refrigerate for at least 2 hours to allow the cheese ring to firm up.
  8. Remove from the refrigerator 30 minutes before serving. Fill the center of the ring with your favorite preserves. Serve with crackers or pretzels.
