Ingredients:
- 2 lbs winter squash, peeled and cubed
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 2 tbsp pure maple syrup
- 1 tbsp unsalted butter, melted
- 1/4 tsp smoked paprika
- 1 tsp fresh lemon juice
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper. Peel the squash and cut into uniform 1-inch cubes.
- In a large mixing bowl, toss the squash cubes with olive oil, salt, and pepper. Spread the cubes across the baking sheet in a single layer, ensuring they are not touching to allow for proper roasting.
- Roast for 15–20 minutes, then remove the pan and flip the cubes.
- Drizzle the melted butter, maple syrup, and smoked paprika over the squash, tossing gently to coat. Return to the oven for another 10–15 minutes until edges are mahogany-colored.
- Immediately after removing from the oven, drizzle with fresh lemon juice to brighten the flavor.
