Ingredients:

  • 2 lbs winter squash, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 2 tbsp pure maple syrup
  • 1 tbsp unsalted butter, melted
  • 1/4 tsp smoked paprika
  • 1 tsp fresh lemon juice

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper. Peel the squash and cut into uniform 1-inch cubes.
  2. In a large mixing bowl, toss the squash cubes with olive oil, salt, and pepper. Spread the cubes across the baking sheet in a single layer, ensuring they are not touching to allow for proper roasting.
  3. Roast for 15–20 minutes, then remove the pan and flip the cubes.
  4. Drizzle the melted butter, maple syrup, and smoked paprika over the squash, tossing gently to coat. Return to the oven for another 10–15 minutes until edges are mahogany-colored.
  5. Immediately after removing from the oven, drizzle with fresh lemon juice to brighten the flavor.
