Ingredients:
- 1 pound (450g) fresh button or cremini mushrooms, cleaned and halved
- 2 tablespoons (30ml) olive oil
- 4 cloves garlic, minced
- 1 teaspoon (5g) fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 teaspoon (5g) fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
- Salt and pepper to taste
- Juice of 1/2 lemon
- Fresh parsley, chopped, for garnish (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine halved mushrooms, olive oil, minced garlic, thyme, rosemary, salt, and pepper. Stir well to coat all mushrooms evenly.
- Line a baking sheet with parchment paper for easy cleanup (optional).
- Spread the mushroom mixture in a single layer on the baking sheet.
- Roast in the preheated oven for 15-20 minutes, stirring halfway through, until mushrooms are golden brown and tender.
- Remove from the oven, drizzle with lemon juice, and toss gently.
- Garnish with chopped parsley (if using) and serve warm.
