Ingredients:

  • 1 pound (450g) fresh button or cremini mushrooms, cleaned and halved
  • 2 tablespoons (30ml) olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon (5g) fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 teaspoon (5g) fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
  • Salt and pepper to taste
  • Juice of 1/2 lemon
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine halved mushrooms, olive oil, minced garlic, thyme, rosemary, salt, and pepper. Stir well to coat all mushrooms evenly.
  3. Line a baking sheet with parchment paper for easy cleanup (optional).
  4. Spread the mushroom mixture in a single layer on the baking sheet.
  5. Roast in the preheated oven for 15-20 minutes, stirring halfway through, until mushrooms are golden brown and tender.
  6. Remove from the oven, drizzle with lemon juice, and toss gently.
  7. Garnish with chopped parsley (if using) and serve warm.
