Ingredients:

  • 1 large head green cabbage, outer leaves removed
  • 2 tablespoons olive oil (30 ml)
  • Salt and freshly ground black pepper to taste
  • 4 tablespoons unsalted butter (56g)
  • 1 tablespoon fresh lemon juice (15 ml)
  • 1/4 cup chopped fresh parsley (15g)
  • Optional: Red pepper flakes for a touch of heat

Instructions:

  1. Preheat oven to 400°F (200°C). Cut the cabbage into 1-inch thick steaks – aim for 4 steaks from the center of the cabbage, leaving the core intact to hold them together.
  2. Brush both sides of the cabbage steaks with olive oil. Season generously with salt and pepper. Place on the prepared baking sheet and roast for 25-30 minutes, or until tender and slightly browned, flipping halfway through.
  3. While the cabbage is roasting, melt the butter in a small saucepan over medium heat. Cook, swirling occasionally, until the butter turns a nutty brown color and smells fragrant (about 5-7 minutes).
  4. Remove the brown butter from the heat and stir in the lemon juice and parsley. Season with salt and pepper to taste.
  5. Drizzle the brown butter sauce over the roasted cabbage steaks. Serve immediately. Sprinkle with red pepper flakes, if desired. This cabbage steak recipe is sure to be a family favorite!
