Ingredients:
- 1 large head green cabbage, outer leaves removed
- 2 tablespoons olive oil (30 ml)
- Salt and freshly ground black pepper to taste
- 4 tablespoons unsalted butter (56g)
- 1 tablespoon fresh lemon juice (15 ml)
- 1/4 cup chopped fresh parsley (15g)
- Optional: Red pepper flakes for a touch of heat
Instructions:
- Preheat oven to 400°F (200°C). Cut the cabbage into 1-inch thick steaks – aim for 4 steaks from the center of the cabbage, leaving the core intact to hold them together.
- Brush both sides of the cabbage steaks with olive oil. Season generously with salt and pepper. Place on the prepared baking sheet and roast for 25-30 minutes, or until tender and slightly browned, flipping halfway through.
- While the cabbage is roasting, melt the butter in a small saucepan over medium heat. Cook, swirling occasionally, until the butter turns a nutty brown color and smells fragrant (about 5-7 minutes).
- Remove the brown butter from the heat and stir in the lemon juice and parsley. Season with salt and pepper to taste.
- Drizzle the brown butter sauce over the roasted cabbage steaks. Serve immediately. Sprinkle with red pepper flakes, if desired. This cabbage steak recipe is sure to be a family favorite!
