Ingredients:

  • 1.5 lbs salmon fillets, center-cut
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 tsp sriracha

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the salmon fillets bone dry with paper towels. Note: This is the most important step for glaze adhesion.
  3. In a small mixing bowl, whisk the honey, soy sauce, lemon juice, brown sugar, minced garlic, grated ginger, and sriracha.
  4. Stir until the brown sugar is fully dissolved and the mixture is smooth.
  5. Spoon the glaze generously over the salmon fillets.
  6. Use a brush to ensure total coverage on the tops and sides. Note: Avoid glazing the bottom to keep the skin from sticking.
  7. Bake for 8-12 minutes until the glaze is bubbling and mahogany colored.
  8. Check the internal temperature: 135°F (57°C) for medium rare or 145°F (63°C) for well done.
  9. Remove from the oven and let the fish rest for 3 minutes. Note: This allows the glaze to set into a sticky lacquer.
