Ingredients:

  • 14 oz (400g) extra-firm tofu, drained and pressed
  • 3 tablespoons (45ml) lemon juice
  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons (15g) nutritional yeast
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • 1 tablespoon (15g) fresh basil, chopped (optional for garnish)

Instructions:

  1. Drain and press tofu to remove excess moisture.
  2. Crumble tofu into a mixing bowl using a fork or masher until desired feta-like texture is achieved.
  3. Add lemon juice, olive oil, nutritional yeast, oregano, garlic powder, salt, and black pepper to the bowl.
  4. Stir gently to combine, ensuring tofu is well-coated.
  5. Taste the mixture and adjust seasoning as desired.
  6. For enhanced flavors, let the tofu feta sit for at least 10 minutes to marinate or refrigerate for up to 1 hour.
