Ingredients:

  • 1 lb (450g) ground beef (80% lean)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • ½ cup (120ml) sour cream
  • 2 tablespoons mayonnaise
  • 1-2 tablespoons chipotle in adobo sauce (adjust to taste)
  • 1 tablespoon lime juice
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Heat a large skillet over medium heat.
  2. Add chopped onions and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic, cook for another minute until fragrant.
  4. Add ground beef to the skillet, breaking it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes.
  5. Stir in chili powder, cumin, paprika, salt, and pepper. Adjust seasoning to taste.
  6. In a mixing bowl, combine sour cream, mayonnaise, chipotle in adobo, and lime juice. Whisk until smooth.
  7. In a skillet or on a hot griddle, briefly warm tortillas for 30 seconds on each side until pliable.
  8. Place a generous amount of the beef mixture onto each tortilla.
  9. Top with lettuce, tomatoes, shredded cheese, and drizzle with creamy sauce.
  10. Garnish with fresh cilantro if desired.
