Ingredients:
- 1 lb (450g) ground beef (80% lean)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- ½ teaspoon paprika
- Salt and pepper, to taste
- ½ cup (120ml) sour cream
- 2 tablespoons mayonnaise
- 1-2 tablespoons chipotle in adobo sauce (adjust to taste)
- 1 tablespoon lime juice
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish (optional)
Instructions:
- Heat a large skillet over medium heat.
- Add chopped onions and sauté until translucent, about 3-4 minutes.
- Add minced garlic, cook for another minute until fragrant.
- Add ground beef to the skillet, breaking it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes.
- Stir in chili powder, cumin, paprika, salt, and pepper. Adjust seasoning to taste.
- In a mixing bowl, combine sour cream, mayonnaise, chipotle in adobo, and lime juice. Whisk until smooth.
- In a skillet or on a hot griddle, briefly warm tortillas for 30 seconds on each side until pliable.
- Place a generous amount of the beef mixture onto each tortilla.
- Top with lettuce, tomatoes, shredded cheese, and drizzle with creamy sauce.
- Garnish with fresh cilantro if desired.
