Ingredients:

  • 4 large flour tortillas (10-inch)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked chicken, shredded (optional)
  • ½ cup black beans, drained and rinsed (optional)
  • ½ cup bell peppers, diced (optional)
  • 1-2 tablespoons olive oil or butter

Instructions:

  1. Gather all ingredients and chop any optional fillings as desired.
  2. Lay a tortilla flat on a clean surface. Sprinkle 1 cup cheddar and ½ cup mozzarella cheese over half of the tortilla. Add optional fillings if using. Fold the tortilla over to create a half-moon shape.
  3. Heat 1 tablespoon olive oil or butter in a skillet over medium heat. Place the folded quesadilla in the pan. Cook for 3-4 minutes until golden brown and the cheese begins to melt.
  4. Flip carefully, adding more oil if necessary, and cook the other side for another 3-4 minutes.
  5. Remove from the pan and let cool slightly. Cut each quesadilla into wedges and serve warm.
