Ingredients:

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour, spooned and levelled
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • Pinch of flaky sea salt (optional finish)

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3 minutes).
  3. Beat in the egg until just combined, then stir in the vanilla extract. Scrape down the sides of the bowl.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or stirring gently until just combined. Do not overmix.
  6. Drop rounded tablespoons of dough onto the prepared sheets, leaving about 2 inches between each mound.
  7. Gently press down on the top of each dough ball to flatten slightly. Sprinkle with optional flaky sea salt.
  8. Bake for 10–12 minutes, or until the edges are lightly golden brown but the centres still look slightly soft.
  9. Let cookies rest on the hot baking sheet for 5 minutes, then carefully transfer them to a wire rack to cool completely.
