Ingredients:
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour, spooned and levelled
- ½ teaspoon baking soda
- ½ teaspoon fine sea salt
- Pinch of flaky sea salt (optional finish)
Instructions:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3 minutes).
- Beat in the egg until just combined, then stir in the vanilla extract. Scrape down the sides of the bowl.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed or stirring gently until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared sheets, leaving about 2 inches between each mound.
- Gently press down on the top of each dough ball to flatten slightly. Sprinkle with optional flaky sea salt.
- Bake for 10–12 minutes, or until the edges are lightly golden brown but the centres still look slightly soft.
- Let cookies rest on the hot baking sheet for 5 minutes, then carefully transfer them to a wire rack to cool completely.
