Ingredients:

  • 1 (7 inch / 18cm) whole wheat tortilla
  • 2 tbsp (30g) plain hummus
  • 2 slices (60g) low-sodium deli turkey breast
  • 2 tbsp (15g) finely shredded carrots
  • 5 (1/2 inch / 1cm) thick cucumber slices
  • 1/4 cup (35g) fresh blueberries

Instructions:

  1. Lay the tortilla flat on the cutting board. Using a butter knife, spread the hummus in an even layer across the entire surface, leaving a tiny margin at the edges to prevent leaking.
  2. Place the turkey slices flat atop the hummus and sprinkle the shredded carrots evenly over the turkey. Press down gently with your palm to ensure the layers adhere.
  3. Roll the tortilla tightly from one end to the other into a firm cylinder. Slice the roll into 1/2 inch (1cm) rounds.
