Ingredients:
- 1 (7 inch / 18cm) whole wheat tortilla
- 2 tbsp (30g) plain hummus
- 2 slices (60g) low-sodium deli turkey breast
- 2 tbsp (15g) finely shredded carrots
- 5 (1/2 inch / 1cm) thick cucumber slices
- 1/4 cup (35g) fresh blueberries
Instructions:
- Lay the tortilla flat on the cutting board. Using a butter knife, spread the hummus in an even layer across the entire surface, leaving a tiny margin at the edges to prevent leaking.
- Place the turkey slices flat atop the hummus and sprinkle the shredded carrots evenly over the turkey. Press down gently with your palm to ensure the layers adhere.
- Roll the tortilla tightly from one end to the other into a firm cylinder. Slice the roll into 1/2 inch (1cm) rounds.
