Ingredients:

  • 250g (8.8 oz) all-purpose flour, plus extra for dusting
  • 125g (4.4 oz) Quark cheese
  • 60ml (2 fl oz) vegetable oil
  • 50g (1.8 oz) granulated sugar (optional)
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 teaspoon vanilla extract (optional)
  • Lemon zest (from ½ lemon, optional)

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar (if using).
  2. Add the Quark, oil, and vanilla extract (if using) to the dry ingredients.
  3. Mix until a shaggy dough forms. Knead briefly on a lightly floured surface for 2-3 minutes.
  4. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes (optional).
  5. On a lightly floured surface, roll out the dough to your desired thickness.
  6. Cut the dough into your desired shape and fill with your chosen filling.
  7. Bake in a preheated oven at 350°F (175°C) until golden brown. Baking time will vary depending on the size and filling.
