Ingredients:
- 1 cup (90g) rolled oats, old-fashioned
- 1/2 cup (65g) peanut butter, smooth (or other nut/seed butter)
- 1/2 cup (120ml) pumpkin puree, plain (not pumpkin pie filling)
- 1/4 cup (60ml) maple syrup, pure
- 2 tablespoons (30ml) chia seeds
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1/4 cup (40g) chopped walnuts or pecans (optional)
- 1/4 cup (40g) dark chocolate chips (optional)
- Ground cinnamon, finely chopped nuts, or shredded coconut (optional)
Instructions:
- In a large mixing bowl, combine all ingredients for the bites.
- Stir until well combined and a sticky dough forms.
- Cover the bowl and chill in the refrigerator for at least 30 minutes to firm up the mixture.
- Roll the mixture into 1-inch balls using a cookie scoop or spoon.
- Roll the balls in ground cinnamon, chopped nuts, or shredded coconut (optional).
- Place the energy bites on a baking sheet lined with parchment paper (optional).
- Refrigerate for another 15 minutes to help them set up further (optional).
- Enjoy immediately or store in an airtight container in the refrigerator.
