Ingredients:

  • 1 cup (90g) rolled oats, old-fashioned
  • 1/2 cup (65g) peanut butter, smooth (or other nut/seed butter)
  • 1/2 cup (120ml) pumpkin puree, plain (not pumpkin pie filling)
  • 1/4 cup (60ml) maple syrup, pure
  • 2 tablespoons (30ml) chia seeds
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (40g) chopped walnuts or pecans (optional)
  • 1/4 cup (40g) dark chocolate chips (optional)
  • Ground cinnamon, finely chopped nuts, or shredded coconut (optional)

Instructions:

  1. In a large mixing bowl, combine all ingredients for the bites.
  2. Stir until well combined and a sticky dough forms.
  3. Cover the bowl and chill in the refrigerator for at least 30 minutes to firm up the mixture.
  4. Roll the mixture into 1-inch balls using a cookie scoop or spoon.
  5. Roll the balls in ground cinnamon, chopped nuts, or shredded coconut (optional).
  6. Place the energy bites on a baking sheet lined with parchment paper (optional).
  7. Refrigerate for another 15 minutes to help them set up further (optional).
  8. Enjoy immediately or store in an airtight container in the refrigerator.
