Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- ½ tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- ¼ tsp (1g) ground nutmeg
- 1 cup (245g) pure pumpkin puree
- ½ cup (120g) plain Greek yogurt (low-fat)
- 2 tbsp (30ml) pure maple syrup
- 3 tbsp (42g) unsalted butter, melted and cooled
Instructions:
- Preheat your oven to 400°F (200°C) and lightly grease an 8x8 inch baking dish with butter or non-stick spray.
- In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
- In a separate large bowl, stir together the pumpkin puree, Greek yogurt, maple syrup, and melted butter until the mixture is smooth.
- Gently fold the dry ingredients into the wet mixture using a spatula, stirring only until no streaks of flour remain to maintain fluffiness.
- Spread the batter evenly into the prepared baking dish, smoothing the top with a spatula.
- Bake for 20 minutes, or until the edges are deep mahogany brown and the center springs back when lightly touched.
- Remove from the oven and let the bake rest for 5 minutes before slicing into 8 squares.
