Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tbsp (12g) baking powder
  • ½ tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • ¼ tsp (1g) ground nutmeg
  • 1 cup (245g) pure pumpkin puree
  • ½ cup (120g) plain Greek yogurt (low-fat)
  • 2 tbsp (30ml) pure maple syrup
  • 3 tbsp (42g) unsalted butter, melted and cooled

Instructions:

  1. Preheat your oven to 400°F (200°C) and lightly grease an 8x8 inch baking dish with butter or non-stick spray.
  2. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, stir together the pumpkin puree, Greek yogurt, maple syrup, and melted butter until the mixture is smooth.
  4. Gently fold the dry ingredients into the wet mixture using a spatula, stirring only until no streaks of flour remain to maintain fluffiness.
  5. Spread the batter evenly into the prepared baking dish, smoothing the top with a spatula.
  6. Bake for 20 minutes, or until the edges are deep mahogany brown and the center springs back when lightly touched.
  7. Remove from the oven and let the bake rest for 5 minutes before slicing into 8 squares.
