Ingredients:

  • 1/2 cup (120g) almond butter
  • 1 cup (150g) pitted Medjool dates
  • 2 tbsp (30ml) coconut oil
  • 1/2 cup (45g) vanilla protein powder
  • 1 cup (90g) oat flour
  • 1 tbsp (10g) chia seeds
  • 1/4 cup (35g) mini dark chocolate chips
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) sea salt

Instructions:

  1. Place the pitted dates into the food processor and pulse until they form a thick, sticky paste. Note: Make sure there are no large chunks left.
  2. Add the almond butter, melted coconut oil, and vanilla extract to the date paste. Process on high for 30-60 seconds until the mixture looks smooth and glossy. You should start to smell the vanilla blending with the rich dates here.
  3. Transfer the wet mixture to a large bowl. Fold in the protein powder, oat flour, chia seeds, and salt. Mix until a heavy, dough like consistency forms.
  4. Fold in the chocolate chips gently with a spatula so they stay whole.
  5. Scoop about 1 tablespoon of dough per ball.
  6. Roll firmly between your palms until the surface is smooth and spherical.
  7. Place on a parchment lined tray.
  8. Chill in the refrigerator for 30 minutes until the balls feel firm to the touch.
