Ingredients:

  • 250g (2 cups) all-purpose flour, plus more for dusting
  • 100g (1/2 cup) granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 125g (1/2 cup, 1 stick) unsalted butter, cold and cubed
  • 1 large egg
  • 60ml (1/4 cup) milk
  • 1 tsp vanilla extract
  • 100g (3.5oz) ground poppy seeds
  • 500ml (2 cups) milk
  • 50g (1/4 cup) granulated sugar
  • 1 packet (approx. 40g/1.4 oz) vanilla pudding powder (instant)
  • 150g (1 1/4 cup) all-purpose flour
  • 100g (1/2 cup) granulated sugar
  • 100g (1/2 cup, 1 stick) unsalted butter, cold and cubed

Instructions:

  1. Combine dry ingredients for the dough. Cut in cold butter. Mix in egg, milk, and vanilla. Add poppy seeds. Form into a disc, wrap and chill for 30 minutes.
  2. Whisk together milk, sugar, and pudding powder for the filling. Cook according to package directions, stirring constantly, until thickened. Let cool slightly.
  3. Combine flour, sugar, and cold butter for the streusel. Rub the mixture together with your fingers until it resembles coarse crumbs.
  4. Preheat oven. Grease and flour a 9-inch springform pan. Roll out dough. Press into the bottom of the pan and up the sides.
  5. Pour the pudding filling over the dough base. Sprinkle the streusel topping evenly over the pudding.
  6. Bake until the streusel is golden brown and the cake is set (test with a toothpick). Let cool completely before removing from the pan.
