Ingredients:
- 250g (2 cups) all-purpose flour, plus more for dusting
- 100g (1/2 cup) granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 125g (1/2 cup, 1 stick) unsalted butter, cold and cubed
- 1 large egg
- 60ml (1/4 cup) milk
- 1 tsp vanilla extract
- 100g (3.5oz) ground poppy seeds
- 500ml (2 cups) milk
- 50g (1/4 cup) granulated sugar
- 1 packet (approx. 40g/1.4 oz) vanilla pudding powder (instant)
- 150g (1 1/4 cup) all-purpose flour
- 100g (1/2 cup) granulated sugar
- 100g (1/2 cup, 1 stick) unsalted butter, cold and cubed
Instructions:
- Combine dry ingredients for the dough. Cut in cold butter. Mix in egg, milk, and vanilla. Add poppy seeds. Form into a disc, wrap and chill for 30 minutes.
- Whisk together milk, sugar, and pudding powder for the filling. Cook according to package directions, stirring constantly, until thickened. Let cool slightly.
- Combine flour, sugar, and cold butter for the streusel. Rub the mixture together with your fingers until it resembles coarse crumbs.
- Preheat oven. Grease and flour a 9-inch springform pan. Roll out dough. Press into the bottom of the pan and up the sides.
- Pour the pudding filling over the dough base. Sprinkle the streusel topping evenly over the pudding.
- Bake until the streusel is golden brown and the cake is set (test with a toothpick). Let cool completely before removing from the pan.
