Ingredients:

  • 1 package (14.1 ounces/400g) pre-made puff pastry sheets, thawed
  • 1 cup (240 ml) pizza sauce
  • 2 cups (200g) shredded mozzarella cheese
  • 1 cup (100g) sliced pepperoni
  • ½ cup (50g) grated Parmesan cheese
  • 1 large egg, beaten
  • 1 tablespoon dried Italian herbs
  • All-purpose flour, for dusting
  • Olive oil cooking spray

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface. Gently unfold the thawed puff pastry sheets. Roll out to 1/8 inch thickness.
  3. Cut each sheet into 6 equal squares (3x2 grid).
  4. Spoon 1 tablespoon pizza sauce onto the center of each square. Top with mozzarella, pepperoni, Parmesan, and herbs.
  5. Fold one corner over diagonally to form a triangle. Press edges firmly with a fork to seal.
  6. Brush tops of pockets with beaten egg.
  7. Place pockets on baking sheet. Bake for 15-20 minutes, until golden brown and puffy.
