Ingredients:
- 1 package (14.1 ounces/400g) pre-made puff pastry sheets, thawed
- 1 cup (240 ml) pizza sauce
- 2 cups (200g) shredded mozzarella cheese
- 1 cup (100g) sliced pepperoni
- ½ cup (50g) grated Parmesan cheese
- 1 large egg, beaten
- 1 tablespoon dried Italian herbs
- All-purpose flour, for dusting
- Olive oil cooking spray
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Lightly flour a clean surface. Gently unfold the thawed puff pastry sheets. Roll out to 1/8 inch thickness.
- Cut each sheet into 6 equal squares (3x2 grid).
- Spoon 1 tablespoon pizza sauce onto the center of each square. Top with mozzarella, pepperoni, Parmesan, and herbs.
- Fold one corner over diagonally to form a triangle. Press edges firmly with a fork to seal.
- Brush tops of pockets with beaten egg.
- Place pockets on baking sheet. Bake for 15-20 minutes, until golden brown and puffy.
