Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (3g) salt
- 1/2 cup (120ml) neutral oil
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/2 cup (120g) sour cream
- 1 1/2 cups (170g) shredded zucchini
- 1 cup (220g) crushed pineapple
Instructions:
- Grate the zucchini, place it in a colander, sprinkle with a pinch of salt, and let sit for 10 minutes.
- Transfer zucchini to a clean kitchen towel or paper towels and press down firmly until no more liquid escapes.
- In a large bowl, whisk together all-purpose flour, granulated sugar, baking soda, baking powder, ground cinnamon, and salt until no clumps remain.
- In a medium bowl, beat the eggs, then stir in the neutral oil, sour cream, vanilla extract, and 1 tablespoon of reserved pineapple juice until velvety.
- Pour the wet ingredients into the well of the dry ingredients and fold gently with a spatula until just combined; do not overmix.
- Gently fold in the squeezed zucchini and crushed pineapple until evenly distributed.
- Spoon batter into a 12-cup standard muffin tin and bake for 20 minutes or until golden brown.
