Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz / 170g each)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon kosher salt (5 ml)
- 1/2 teaspoon black pepper (2.5 ml)
- 1 teaspoon garlic powder (5 ml)
- 1 teaspoon onion powder (5 ml)
- 1/2 teaspoon paprika (2.5 ml) (optional, for color and a hint of smokiness)
- 1/4 teaspoon dried thyme (1.25 ml) (optional, for herbaceous flavor)
- Juice of 1/2 lemon (optional, for brightness)
Instructions:
- Preheat oven to 400°F (200°C).
- Pat chicken breasts dry with paper towels. This is crucial for browning.
- In a bowl, whisk together olive oil, salt, pepper, garlic powder, onion powder, paprika, and thyme (if using). Toss chicken breasts in the seasoning mixture, ensuring they are evenly coated. For extra flavor, let marinate in the refrigerator for at least 30 minutes.
- Place chicken breasts on a baking sheet lined with foil or parchment paper. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) using a meat thermometer inserted into the thickest part of the breast. Don't overcook!
- Remove from oven and let the chicken rest for 5-10 minutes before slicing. This allows the juices to redistribute, resulting in more tender and flavorful chicken.
