Ingredients:
- 1.5 cups (135g) rolled oats
- 0.5 cup (45g) protein powder (whey or pea protein)
- 1 tbsp (10g) chia seeds
- 0.5 cup (125g) natural creamy peanut butter
- 0.33 cup (115g) honey or pure maple syrup
- 1 tsp (5ml) pure vanilla extract
- 1 pinch sea salt
- 0.25 cup (40g) mini dark chocolate chips
- 1.5 tbsp (22.5ml) water or unsweetened almond milk
Instructions:
- In a large mixing bowl, whisk together the rolled oats, protein powder, chia seeds, and sea salt. Ensure there are no large lumps of protein powder.
- Make a well in the center of the dry ingredients and pour in the peanut butter, honey, and vanilla extract.
- Use a sturdy spatula to fold the mixture until a tacky dough forms. If the mixture is too dry or crumbly, incorporate the water or almond milk 1 teaspoon at a time.
- Fold in the mini dark chocolate chips until evenly distributed.
- Using a small cookie scoop or your hands, roll the dough into 15 even-sized spheres.
- Place the bites in an airtight glass container and refrigerate for 20 minutes to set, or consume immediately.
