Ingredients:

  • 1.5 cups (135g) rolled oats
  • 0.5 cup (45g) protein powder (whey or pea protein)
  • 1 tbsp (10g) chia seeds
  • 0.5 cup (125g) natural creamy peanut butter
  • 0.33 cup (115g) honey or pure maple syrup
  • 1 tsp (5ml) pure vanilla extract
  • 1 pinch sea salt
  • 0.25 cup (40g) mini dark chocolate chips
  • 1.5 tbsp (22.5ml) water or unsweetened almond milk

Instructions:

  1. In a large mixing bowl, whisk together the rolled oats, protein powder, chia seeds, and sea salt. Ensure there are no large lumps of protein powder.
  2. Make a well in the center of the dry ingredients and pour in the peanut butter, honey, and vanilla extract.
  3. Use a sturdy spatula to fold the mixture until a tacky dough forms. If the mixture is too dry or crumbly, incorporate the water or almond milk 1 teaspoon at a time.
  4. Fold in the mini dark chocolate chips until evenly distributed.
  5. Using a small cookie scoop or your hands, roll the dough into 15 even-sized spheres.
  6. Place the bites in an airtight glass container and refrigerate for 20 minutes to set, or consume immediately.
