Ingredients:

  • 1 cup (160g) old-fashioned rolled oats
  • 1/2 cup (125g) creamy natural peanut butter
  • 1/3 cup (110g) raw honey
  • 1/4 tsp (1.5g) sea salt
  • 1/4 cup (35g) chia seeds
  • 1/4 cup (40g) mini dark chocolate chips

Instructions:

  1. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a microwave-safe bowl, combine the peanut butter and honey. Heat for 30 seconds until the mixture becomes fluid and glossy, then stir in the sea salt.
  3. Pour the wet mixture over the rolled oats, chia seeds, and chocolate chips. Fold together with a spatula until all oats are evenly coated.
  4. Transfer the mixture to the prepared pan and press down firmly with a spoon or parchment paper until the surface is flat and compact.
  5. Refrigerate for at least 1 hour until the bars are firm to the touch before slicing.
