Ingredients:

  • 1 cup (100g) Old Fashioned Rolled Oats
  • 1/2 cup (125g) Creamy Peanut Butter
  • 1/3 cup (110g) Honey
  • 1 tsp (5ml) Vanilla Extract
  • 1/4 tsp (1.5g) Fine Sea Salt
  • 1/2 cup (90g) Mini Semi-Sweet Chocolate Chips
  • 1/4 cup (30g) Ground Flaxseed Meal

Instructions:

  1. Place the peanut butter, honey, vanilla extract, and salt in a large mixing bowl. Stir vigorously until the mixture is smooth and glossy.
  2. Fold in the ground flaxseed and rolled oats. Mix until the oats are fully saturated and no dry pockets remain.
  3. Stir in the chocolate chips until evenly distributed throughout the dough.
  4. Scoop approximately 1 tablespoon of dough and roll it between your palms to create a sphere. Repeat until all dough is used.
  5. Place the balls on parchment paper and chill in the refrigerator for 20 minutes to set the fats for a firmer texture.
