Ingredients:
- 1 cup (100g) Old Fashioned Rolled Oats
- 1/2 cup (125g) Creamy Peanut Butter
- 1/3 cup (110g) Honey
- 1 tsp (5ml) Vanilla Extract
- 1/4 tsp (1.5g) Fine Sea Salt
- 1/2 cup (90g) Mini Semi-Sweet Chocolate Chips
- 1/4 cup (30g) Ground Flaxseed Meal
Instructions:
- Place the peanut butter, honey, vanilla extract, and salt in a large mixing bowl. Stir vigorously until the mixture is smooth and glossy.
- Fold in the ground flaxseed and rolled oats. Mix until the oats are fully saturated and no dry pockets remain.
- Stir in the chocolate chips until evenly distributed throughout the dough.
- Scoop approximately 1 tablespoon of dough and roll it between your palms to create a sphere. Repeat until all dough is used.
- Place the balls on parchment paper and chill in the refrigerator for 20 minutes to set the fats for a firmer texture.
