Ingredients:

  • 2 medium overripe bananas, mashed (approx. 3/4 cup / 170g)
  • 1/2 cup (125g) creamy peanut butter
  • 1/4 cup (60ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 cup (90g) rolled oats
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) sea salt
  • 1/2 tsp (2g) ground cinnamon
  • 1/3 cup (60g) dark chocolate chips
  • 1/4 cup (30g) crushed walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the bananas in a bowl until no large lumps remain. Wait until the mixture looks like a smooth puree.
  3. Stir in the peanut butter, maple syrup, and vanilla until the mixture is velvety and uniform in color.
  4. Fold in the oats, baking soda, salt, and cinnamon. Stir gently until combined and the dough feels tacky.
  5. Fold in the dark chocolate chips and crushed walnuts. Ensure they are evenly distributed so every bite has a crunch.
  6. Scoop rounded tablespoons of dough onto the baking sheet, pressing down slightly.
  7. Bake for 10–12 minutes until the edges are set and the tops look matte.
