Ingredients:
- 2 medium overripe bananas, mashed (approx. 3/4 cup / 170g)
- 1/2 cup (125g) creamy peanut butter
- 1/4 cup (60ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 cup (90g) rolled oats
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) sea salt
- 1/2 tsp (2g) ground cinnamon
- 1/3 cup (60g) dark chocolate chips
- 1/4 cup (30g) crushed walnuts
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the bananas in a bowl until no large lumps remain. Wait until the mixture looks like a smooth puree.
- Stir in the peanut butter, maple syrup, and vanilla until the mixture is velvety and uniform in color.
- Fold in the oats, baking soda, salt, and cinnamon. Stir gently until combined and the dough feels tacky.
- Fold in the dark chocolate chips and crushed walnuts. Ensure they are evenly distributed so every bite has a crunch.
- Scoop rounded tablespoons of dough onto the baking sheet, pressing down slightly.
- Bake for 10–12 minutes until the edges are set and the tops look matte.
