Ingredients:

  • 1/2 cup (100g) granulated sugar
  • 1/3 cup (40g) all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups (480ml) whole milk
  • 3 large egg yolks, beaten
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons (28g) unsalted butter
  • 4 ripe bananas, sliced
  • 1 box (11oz / 311g) vanilla wafers
  • 2 cups (480ml) heavy whipping cream
  • 1/4 cup (30g) powdered sugar
  • Additional vanilla wafers and banana slices for garnish (optional)

Instructions:

  1. In a medium saucepan, whisk together sugar, flour, and salt.
  2. Gradually whisk in milk, then add beaten egg yolks.
  3. Cook over medium heat, stirring constantly until the mixture thickens and bubbles (about 10 minutes).
  4. Remove from heat and stir in vanilla and butter until fully melted.
  5. In a 9x13-inch baking dish, start by layering vanilla wafers on the bottom.
  6. Add a layer of sliced bananas over the wafers.
  7. Pour half of the pudding over the banana and wafers.
  8. Repeat the layering process with the remaining ingredients.
  9. In a mixing bowl, whip heavy cream and powdered sugar until soft peaks form.
  10. Spread whipped cream evenly over the top of the assembled pudding.
  11. Cover the dish and refrigerate for at least 2 hours before serving.
  12. Garnish with additional banana slices and vanilla wafers just before serving.
