Ingredients:
- 1/2 cup (100g) granulated sugar
- 1/3 cup (40g) all-purpose flour
- 1/4 teaspoon salt
- 2 cups (480ml) whole milk
- 3 large egg yolks, beaten
- 1 teaspoon pure vanilla extract
- 2 tablespoons (28g) unsalted butter
- 4 ripe bananas, sliced
- 1 box (11oz / 311g) vanilla wafers
- 2 cups (480ml) heavy whipping cream
- 1/4 cup (30g) powdered sugar
- Additional vanilla wafers and banana slices for garnish (optional)
Instructions:
- In a medium saucepan, whisk together sugar, flour, and salt.
- Gradually whisk in milk, then add beaten egg yolks.
- Cook over medium heat, stirring constantly until the mixture thickens and bubbles (about 10 minutes).
- Remove from heat and stir in vanilla and butter until fully melted.
- In a 9x13-inch baking dish, start by layering vanilla wafers on the bottom.
- Add a layer of sliced bananas over the wafers.
- Pour half of the pudding over the banana and wafers.
- Repeat the layering process with the remaining ingredients.
- In a mixing bowl, whip heavy cream and powdered sugar until soft peaks form.
- Spread whipped cream evenly over the top of the assembled pudding.
- Cover the dish and refrigerate for at least 2 hours before serving.
- Garnish with additional banana slices and vanilla wafers just before serving.
