Ingredients:
- 1 cup (125g) all-purpose flour
- 1 ½ cups (360ml) milk
- 2 large eggs
- 2 tablespoons (25g) granulated sugar
- 1/4 teaspoon salt
- 2 tablespoons (28g) unsalted butter, melted, plus more for greasing the pan
- Powdered sugar (optional)
- Maple syrup (optional)
- Fresh berries (strawberries, blueberries, raspberries) (optional)
- Sliced apples or bananas (optional)
- Nutella or other chocolate spread (optional)
- Lemon juice (optional)
Instructions:
- In a large mixing bowl, whisk together the flour, sugar, and salt.
- Gradually add the milk to the dry ingredients, whisking continuously to avoid lumps. Add the eggs and melted butter, and whisk until the batter is smooth and well combined.
- Heat a non-stick frying pan or crepe pan over medium heat. Lightly grease the pan with butter or cooking spray.
- Pour approximately ¼ cup of batter onto the hot pan, immediately swirling the pan to spread the batter into a thin, even circle.
- Cook for 1-2 minutes, or until the edges start to lift and the bottom is golden brown.
- Carefully flip the crepe with a spatula and cook for another 30-60 seconds, or until the other side is lightly golden brown.
- Transfer the cooked crepe to a plate and repeat with the remaining batter, stacking the crepes as they are cooked. Add a little butter to the pan as needed to prevent sticking.
- Serve the pannenkoeken warm with your favorite toppings.
