Ingredients:

  • 1 cup (150g) Medjool dates, pitted
  • 1/2 cup (65g) raw walnuts
  • 1/3 cup (30g) raw cacao powder
  • 2 tbsp (32g) creamy almond butter
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 tsp (1.5g) sea salt

Instructions:

  1. Place the walnuts in the food processor and pulse until they reach a fine, sandy consistency.
  2. Add the pitted dates, cacao powder, almond butter, vanilla, and salt. Process on high, scraping the sides every 30 seconds, until the mixture transforms into a thick, sticky paste that clumps together.
  3. Scoop approximately 1 tablespoon of the mixture at a time and roll the dough between your palms to form smooth, uniform spheres.
  4. Place the spheres on a parchment-lined tray.
  5. Transfer the tray to the refrigerator for at least 30 minutes to allow the fats to solidify and the bites to firm up.
