- 1 Tbsp Olive Oil or Neutral Oil
- 1 medium Yellow Onion, diced
- 1 medium Bell Pepper, diced (red or green)
- 4 cloves Garlic, minced
- 2 Tbsp Chili Powder (medium heat)
- 1 Tbsp Ground Cumin
- 1 tsp Smoked Paprika
- 1 tsp Dried Oregano
- 1 tsp Salt (Kosher or Sea)
- 1/2 tsp Black Pepper
- 28 oz can Canned Diced Tomatoes, undrained
- 15 oz can Canned Black Beans, rinsed and drained
- 15 oz can Canned Kidney Beans, rinsed and drained
- 6 cups Chicken or Turkey Stock (low sodium)
- 15 oz can Canned Sweetcorn, drained
- 4 oz can Green Chillies (mild), do not drain
- 1 Tbsp Fresh Lime Juice
- 1/4 cup Fresh Coriander/Cilantro, chopped for garnish
Instructions:
- Prep Ingredients: Chop the onion, bell pepper, and garlic. Open, drain, and rinse all canned beans and corn. Set aside the finishing touches (lime juice, coriander).
- Brown the Turkey: Heat the oil in a large Dutch oven over medium-high heat. Add the ground turkey, breaking it up with a spoon. Cook until deeply browned and no pink remains (about 6-8 minutes). Carefully drain any excess fat.
- Sauté Aromatics: Reduce the heat to medium. Add the diced onion and bell pepper to the pot and cook until softened (about 4 minutes). Add the minced garlic and cook for 60 seconds until fragrant.
- Bloom the Spices: Add the chili powder, cumin, smoked paprika, oregano, salt, and pepper directly to the turkey mixture. Stir constantly for 1 minute. This crucial step awakens the flavor compounds.
- Combine Wet Ingredients: Pour in the stock, canned diced tomatoes (with juice), the canned green chillies, the rinsed beans, and the drained sweetcorn. Stir thoroughly.
