  • 5 lbs Lean Ground Turkey (93% recommended)
  • 1 Tbsp Olive Oil or Neutral Oil
  • 1 medium Yellow Onion, diced
  • 1 medium Bell Pepper, diced (red or green)
  • 4 cloves Garlic, minced
  • 2 Tbsp Chili Powder (medium heat)
  • 1 Tbsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Dried Oregano
  • 1 tsp Salt (Kosher or Sea)
  • 1/2 tsp Black Pepper
  • 28 oz can Canned Diced Tomatoes, undrained
  • 15 oz can Canned Black Beans, rinsed and drained
  • 15 oz can Canned Kidney Beans, rinsed and drained
  • 6 cups Chicken or Turkey Stock (low sodium)
  • 15 oz can Canned Sweetcorn, drained
  • 4 oz can Green Chillies (mild), do not drain
  • 1 Tbsp Fresh Lime Juice
  • 1/4 cup Fresh Coriander/Cilantro, chopped for garnish

Instructions:

  1. Prep Ingredients: Chop the onion, bell pepper, and garlic. Open, drain, and rinse all canned beans and corn. Set aside the finishing touches (lime juice, coriander).
  2. Brown the Turkey: Heat the oil in a large Dutch oven over medium-high heat. Add the ground turkey, breaking it up with a spoon. Cook until deeply browned and no pink remains (about 6-8 minutes). Carefully drain any excess fat.
  3. Sauté Aromatics: Reduce the heat to medium. Add the diced onion and bell pepper to the pot and cook until softened (about 4 minutes). Add the minced garlic and cook for 60 seconds until fragrant.
  4. Bloom the Spices: Add the chili powder, cumin, smoked paprika, oregano, salt, and pepper directly to the turkey mixture. Stir constantly for 1 minute. This crucial step awakens the flavor compounds.
  5. Combine Wet Ingredients: Pour in the stock, canned diced tomatoes (with juice), the canned green chillies, the rinsed beans, and the drained sweetcorn. Stir thoroughly.
