Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups (320g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (150g) Nutella
  • Optional: ½ cup (80g) hazelnuts, chopped

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs, one at a time, mixing well after each addition, followed by the vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined.
  6. Chill the cookie dough in the refrigerator for 30 minutes for easier handling.
  7. Scoop a tablespoon of dough, flatten it in your palm, and place a small dollop of Nutella in the center.
  8. Encase the Nutella with the dough, rolling it into a ball.
  9. Place the cookie balls on the baking sheet, spacing them at least 2 inches apart.
  10. Bake for 10-12 minutes or until golden brown around the edges.
  11. Cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
