Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) brown sugar, packed
- ½ cup (100g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 ½ cups (320g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup (150g) Nutella
- Optional: ½ cup (80g) hazelnuts, chopped
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs, one at a time, mixing well after each addition, followed by the vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined.
- Chill the cookie dough in the refrigerator for 30 minutes for easier handling.
- Scoop a tablespoon of dough, flatten it in your palm, and place a small dollop of Nutella in the center.
- Encase the Nutella with the dough, rolling it into a ball.
- Place the cookie balls on the baking sheet, spacing them at least 2 inches apart.
- Bake for 10-12 minutes or until golden brown around the edges.
- Cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
