Ingredients:
- 4 large egg yolks (about 240g)
- 1/3 cup granulated sugar (67g)
- 2 cups whole milk (480ml)
- 1/2 tsp vanilla extract (2.5ml)
- 1/4 cup cornstarch (30g)
- 3 ripe bananas, sliced
- 1 1/2 cups whipped cream (360ml, fresh or packaged)
- 1 cup salted caramel sauce (240ml)
- 1 cup toasted pecans, roughly chopped (100g)
- Additional whipped cream for garnish
- Banana slices for garnish
- Extra salted caramel drizzle
Instructions:
- In a mixing bowl, whisk together egg yolks and sugar until pale and fluffy.
- In a saucepan, heat milk and vanilla extract until just below boiling.
- Whisk cornstarch into the milk mixture, then gradually pour into the egg mixture.
- Return mixture to the saucepan; cook on medium heat, stirring continuously until thickened (about 5-7 minutes).
- Strain custard through fine mesh if desired for smoothness. Let cool slightly.
- Layer half of the sliced bananas evenly on the bottom of the dish.
- Spread a third of the custard over bananas.
- Drizzle with salted caramel and sprinkle with pecans.
- Repeat layering with remaining bananas, custard, salted caramel, and pecans.
- Finish with a final layer of whipped cream.
- Refrigerate for at least 1 hour to allow flavors to meld.
- Before serving, garnish with additional whipped cream, banana slices, and a drizzle of caramel.
