Ingredients:
- 2 cups (475ml) whole milk
- 1 cup (240ml) heavy cream
- 3/4 cup (150g) granulated sugar
- 1/4 cup (30g) cornstarch
- 4 large egg yolks
- 1 tablespoon vanilla extract
- 1 tablespoon bourbon (optional)
- Pinch of salt
- 4 ripe bananas, sliced
- 1 package (12 oz / 340g) vanilla wafers or chessmen cookies
- 2 cups (475ml) heavy whipping cream
- 1/4 cup (30g) powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Combine milk and heavy cream in a saucepan.
- In a separate bowl, whisk together sugar, cornstarch, egg yolks, vanilla extract, bourbon, and salt.
- Gradually pour the warm milk mixture into the egg mixture, whisking constantly.
- Return to the saucepan and cook over medium heat until thickened, stirring continuously.
- Once thickened, remove from heat and let cool slightly.
- In a mixing bowl, beat 2 cups of heavy whipping cream until soft peaks form.
- Gradually add powdered sugar and additional vanilla extract; continue beating until stiff peaks form.
- In the serving dish, create a layer of vanilla wafers on the bottom.
- Add a layer of sliced bananas over the cookies.
- Spoon some vanilla custard over the bananas, spreading evenly.
- Repeat the layers (cookies, bananas, custard) until ingredients are used, finishing with custard on top.
- Spread the whipped cream over the custard layer.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
- Garnish with additional banana slices or cookie pieces if desired.
