Ingredients:
- 2 large (10-inch) whole wheat or spinach tortillas
- 4 oz whipped cream cheese
- 6 slices (150g) lean deli turkey breast, nitrate-free
- 1/2 cup baby spinach leaves, stems removed
- 1/4 cup red bell pepper, julienned
- 1/4 cup carrots, shredded or matchstick-cut
- 1/2 tsp Everything Bagel seasoning
- 1 medium (150g) apple, sliced and tossed in lemon juice
- 1/2 cup sugar snap peas or cucumber slices
- 1/4 cup whole grain pretzels
- 113g Greek yogurt or applesauce
Instructions:
- Lay the tortillas flat on a clean surface. Using an offset spatula, spread the whipped cream cheese in an even layer across the entire surface of both tortillas, reaching all the way to the edges to create a moisture seal.
- Place the deli turkey in a single layer over the bottom two-thirds of each tortilla. Layer the baby spinach, julienned red peppers, and shredded carrots in a thin horizontal line across the center.
- Starting from the edge closest to you, roll each tortilla tightly upward, applying gentle pressure to avoid air pockets. Ensure the 'glue' of the cream cheese at the far edge seals the roll.
- Use a sharp serrated knife to trim the uneven ends. Slice each log into 1-inch (2.5cm) rounds to reveal the colorful spiral pattern.
- Place the pinwheels cut-side up in the main compartment of a bento box. Pack the apple slices, snap peas, pretzels, and Greek yogurt into the side compartments.
