Ingredients:
- 2 cups fresh strawberries, hulled and sliced (approximately 300g)
- 1 tablespoon granulated sugar (12g)
- 2 cups Greek yogurt (plain or vanilla; approximately 480g)
- 1 tablespoon honey or maple syrup (15g; optional)
- 1 teaspoon vanilla extract (5ml; optional)
- 1 cup granola (approximately 100g)
- Fresh mint leaves for garnish (optional)
Instructions:
- In a medium mixing bowl, combine sliced strawberries and granulated sugar. Stir gently to coat the strawberries and allow them to macerate for about 5-10 minutes.
- In a small bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Whisk until smooth.
- In your serving glasses, start with a layer of yogurt mixture. Add a layer of the macerated strawberries (including juice). Follow with a layer of granola. Repeat the layering process until the glasses are filled, finishing with strawberries and a sprinkle of granola on top.
- Optionally, add fresh mint leaves for a pop of color and flavor.
- If desired, chill the parfaits in the refrigerator for 30 minutes before serving.
