Ingredients:
- 1 and ½ cups (150g) graham cracker crumbs
- ½ cup (100g) granulated sugar
- ⅓ cup (75g) unsalted butter, melted
- 16 oz (450g) cream cheese, softened
- 1 cup (240g) creamy peanut butter
- ¾ cup (90g) powdered sugar
- 1 teaspoon vanilla extract
- 1 cup (240ml) whipped topping (or heavy cream, whipped)
Instructions:
- Line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal later.
- In a bowl, combine graham cracker crumbs and sugar.
- Pour melted butter over the mixture and mix until combined.
- Press the mixture into the bottom of the prepared pan, creating an even layer.
- In a mixing bowl, beat softened cream cheese until smooth.
- Add peanut butter, powdered sugar, and vanilla extract; mix until well combined.
- Gently fold in the whipped topping until the mixture is smooth and fluffy.
- Spread the peanut butter filling over the crust in an even layer.
- Cover the pan with plastic wrap and refrigerate for at least 4 hours or until set.
- Remove from the pan using the parchment paper overhang. Cut into bars and serve chilled.
