Ingredients:

  • 1 and ½ cups (150g) graham cracker crumbs
  • ½ cup (100g) granulated sugar
  • ⅓ cup (75g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • 1 cup (240g) creamy peanut butter
  • ¾ cup (90g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) whipped topping (or heavy cream, whipped)

Instructions:

  1. Line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal later.
  2. In a bowl, combine graham cracker crumbs and sugar.
  3. Pour melted butter over the mixture and mix until combined.
  4. Press the mixture into the bottom of the prepared pan, creating an even layer.
  5. In a mixing bowl, beat softened cream cheese until smooth.
  6. Add peanut butter, powdered sugar, and vanilla extract; mix until well combined.
  7. Gently fold in the whipped topping until the mixture is smooth and fluffy.
  8. Spread the peanut butter filling over the crust in an even layer.
  9. Cover the pan with plastic wrap and refrigerate for at least 4 hours or until set.
  10. Remove from the pan using the parchment paper overhang. Cut into bars and serve chilled.
