Ingredients:

  • 110g Coconut oil, melted
  • 200g Unsweetened shredded coconut
  • 80ml Sugar-free maple syrup

Instructions:

  1. Melt the coconut oil. Note: Use a microwave in 30 second bursts to avoid overheating.
  2. Combine the melted coconut oil and sugar-free syrup in your mixing bowl.
  3. Stir the liquids until the mixture is a glossy, uniform liquid.
  4. Pour in the shredded coconut.
  5. Fold the coconut into the liquid until every flake is fully saturated and no dry spots remain.
  6. Line your pan with parchment paper, leaving a little overhang on the sides.
  7. Press the mixture firmly into the bottom until the surface is flat and compact.
  8. Freeze for 30 minutes or refrigerate for 1 hour.
  9. Lift the parchment paper and slice into 12 bars using a sharp knife.
