Ingredients:

  • 2 large cucumbers (approximately 500g total)
  • 8 oz (225g) cream cheese, softened
  • 1 cup (240ml) plain Greek yogurt
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Wash and dry the cucumbers. Use a vegetable peeler to strip the cucumbers into long, thin layers (or slice with a mandoline).
  2. In a mixing bowl, combine softened cream cheese and Greek yogurt until smooth. Add dill, chives, garlic powder, salt, and pepper; mix well.
  3. Lay out one cucumber slice flat. Spread approximately 1 tablespoon of the cream cheese filling evenly over the cucumber. Gently roll the cucumber slice around the filling, starting from one end.
  4. Place the rollups seam-side down on a serving platter. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.
  5. Cut each rollup in half (optional) and arrange on a serving platter.
