Ingredients:
- 2 large cucumbers (approximately 500g total)
- 8 oz (225g) cream cheese, softened
- 1 cup (240ml) plain Greek yogurt
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon fresh chives, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Wash and dry the cucumbers. Use a vegetable peeler to strip the cucumbers into long, thin layers (or slice with a mandoline).
- In a mixing bowl, combine softened cream cheese and Greek yogurt until smooth. Add dill, chives, garlic powder, salt, and pepper; mix well.
- Lay out one cucumber slice flat. Spread approximately 1 tablespoon of the cream cheese filling evenly over the cucumber. Gently roll the cucumber slice around the filling, starting from one end.
- Place the rollups seam-side down on a serving platter. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.
- Cut each rollup in half (optional) and arrange on a serving platter.
